Chicken Macaroni Soup is a native Filipino dish, in the Philippines we called it "SOPAS". I love this soup especially if I feel sick, this is my comforter. I've learned to cook this from my former employer in the Philippines, however, the ingredients might be different from her and this is my way of how to cook it and healthier than the original one. 😁 I am not a professional chef in the kitchen but I am always in the kitchen anyway to cook for my family.

So here are the ingredients (family of five);
  1. 1 Chicken Brest With or without bones
  2. 2 boxes of 340g Gluten-free Macaroni ( you can use any type of macaroni noodles)
  3. 1 Small Onion or half if it's a big one. ( Chopped )
  4. 10 pieces of garlic, or 1 tbsp if it's already chopped.
  5. 1 tbsp Grapeseed Oil 
  6. 5 pieces of carrots, grated them.
  7. 2 heads of Broccoli- Cut the broccoli into small pieces cube or the way you want.
  8. 2 tsp Salt & ground pepper or add more until you get the perfect taste you'd like.
  9. 2 box of Chicken broth
  10. 2 Cups of milk.
  11. 2-3 liters of water.
Instructions:
  • While cutting and preparing all of your ingredients, boil the chicken breasts in the big pot of water mix with chicken broth. wait for it until the chicken is cooked.
  • Now, when the chicken is cooked, remove it from the boiling water and add the macaroni noodles, wait for it until it's cooked.
  • Meanwhile, heat the pan with grapeseed oil or any kind of oil you may want to use, cut the chicken into very small pieces or bigger depends on your taste. 
  • Next, put the onions and garlic into the cooking pan that you prepared when it's a bit brown put the chicken followed by the salt and ground peppers, bring to boil in the medium heat. 
  • Now, when the noodles cooked, transfer the chicken from the cooking pan into the boiling noodles and put the rest of the ingredients which are Milk, Carrots, Broccoli, and boil for about 5 munites as you don't want the vegetables to over-cooked.
